A Chicago study of 3,700 elderly people found that those who ate three servings a day of vegetables, especially green leafy vegetables such as spinach, slowed their mental decline by 40 percent compared to those who only ate one vegetable a day. The fields and long red barns at the University of Vermont will soon house fewer cows as low milk prices, high costs and budget cuts have forced the university to sell its herd.
Other universities are doing the same, or looking for other ways to cut costs, as high feed, fuel and labor prices make it difficult to keep animals during tight economic times. It was only a matter of time before two of New York’s biggest culinary fads — food trucks and Greenmarket fare — united.
